Mini Turkey Meatball, Kale and White Bean Soup….yum!

This soup is the perfect week night meal…simple, healthy, quick, AND hubby-approved. Needless to say, this soup will definitely be added to my weekly meal rotation!

To make this soup even easier you can buy pre-made meatballs or frozen meatballs.  I particularly like Trader Joe’s Frozen Flame Broiled Turkey Meatballs (however they are not mini).  Trader Joe’s also has frozen mini meatballs called Trader Joe’s Party Size Mini Meatballs which are made out of beef, but I have yet to try them.

Mini Turkey Meatball, Kale and White Bean Soup Recipe

Ingredients:
1 cup of celery sliced (approximately 2 stalks)
1/2 cup of onion chopped (approximately 1/2 of a medium sized onion)
1 tablespoon of olive oil
4 cups reduced -sodium chicken broth
4 cups kale, chopped
1 can of cannellini beans, rinsed and drained
1 14 1/2 oz can diced San Marzano tomatoes
1/2 lb of ground turkey plus ingredients for your favorite meatballs OR prepackaged frozen meatballs

Directions:
1.  Make favorite meatballs or to save on time buy pre-made meatballs and heat/cook according to instuctions.
2.  In a large saucepan or pot cook the celery and onion in olive oil over medium-high heat for 3 minutes, stirring occasionally.
3.  Add the broth, kale, beans and undrained tomatoes.
4.  Bring pot to boiling. Then reduce heat.
5.  Cover and simmer for 10 minutes, stirring occasionally.
6.  Season with garlic salt.
7.  Bon Appetite!
