Holiday Brownie Bites!!

This past Sunday we had friends over to celebrate the upcoming holidays and I wanted to make some Christmas-y treats that would pair nicely with the peppermint ice cream I planned on making.

Since I am a lover of all things chocolate and sweet and somewhat brownie obsessed these days…brownie bites popped into my head.  And of course, one of the versions HAD to have peppermint in it as I am also on a peppermint kick….so white chocolate peppermint brownie bites it was….

I also created a version with just some drizzled white chocolate and a cute gingerbread man candy for my non-peppermint lovers out there.  I can’t find the exact candies online that I purchased at Michael’s, but these are pretty close and may even be cuter:).

They were simple to make and delicious.  I used Smitten Kitchen’s brownie recipe but this would easily work with your favorite brownie recipe or even store bought brownie bites that you could step up a notch with some drizzled white chocolate and crushed peppermint (or candy pieces).

Holiday Brownie Bites Recipe



Ingredients:
Your favorite brownie batter or brownie bites
1 cup of white chocolate chips
1/2 cup of crushed candy canes or candy pieces


Directions:
1. Crush candy canes.  Set aside.
2.  Mix brownie batter according to instructions.
3.  Preheat oven to 350 degrees (or 325 degrees if directed by your recipe).
4.  Grease mini muffin tins.
5.  Pour batter into greased mini muffin tins.
6.  Bake brownies at 350 degrees for 13 minutes (or 325 degrees for 15 minutes).
7.  Let brownies cool on baking racks. Then pop out of muffin tins.
8.  Then put white chocolate chips in a heat proof bowl over a pot of simmering water.  Stir white chocolate chips until they are melted.
9.  Pour melted chocolate into a pastry bag with a size 4 pastry tip.  If you have no idea what I am talking about pour melted white chocolate into a small plastic bag with a small hole on one of the bottom edges.  Drizzle white chocolate over brownies.
10.  Top with crushed candy cane or desired candy.
11. Let white chocolate harden.
12.  Serve and enjoy!
