Mini Buttermilk Banana Muffins

My Emma LOVES bananas…we’re talking AT LEAST 1 banana a day… so I thought these muffins would be perfect for her.   She LOVED them.  So did my husband.  They are incredibly moist and yummy.  I, myself, am normally not a banana-flavor kinda gal but THESE… I enjoyed.

As you might have noticed, I am somewhat obsessed with making mini muffins these days as they are the perfect size for toddlers.  They are also a nice bite size treat for company or for me:).

Mini Buttermilk Banana Muffins

Ingredients
  1. 1/2 cup butter, softened
  2. 1 cup sugar ( 7 5/8 oz )
  3. 2 eggs
  4. 1 cup mashed bananas (approximately 3 medium-sized bananas)
  5. 4 tablespoons buttermilk
  6. 1/2 teaspoon vanilla
  7. 1 3/4 cups flour (7 3/4 oz flour)
  8. 1 teaspoon baking powder
  9. 1/8 teaspoon baking soda
  10. 1/4 teaspoon salt
Instructions
  1. 1. Preheat oven to 350 degrees.
  2. 2. Grease muffin tins and set aside.
  3. 3. Cream butter and sugar together in bowl or in stand mixer.
  4. 4. Add the eggs, bananas, buttermilk and vanilla until the batter is well mixed.
  5. 5. Add the flour, baking powder, baking soda and salt. Mix until well combined.
  6. 6. Pour batter into muffin tins and bake for 10 to 12 minutes or until a toothpick comes out clean.
