Blueberry Mojito

After blueberry picking and crisp making last week I still had lots of blueberries left over so what better thing to do than make a blueberry simple syrup…perfect to sweeten your iced tea with OR to make blueberry mojitos with!!

Mojitos are one of my favorite drinks and they are easy to make in bulk, in fact, I prefer to do that as opposed to making each mojito individually.  I just times the recipe by 5 and put it in a pitcher instead of a glass.  Perfect for a party or casual get together for the tail-end of summer and an abundance of blueberries!

Ingredients for the simple syrup
  1. 1 cup of blueberries
  2. 1 cup of granulated sugar
  3. 1 cup of water
Ingredients for one mojito
  1. 10 to 15 mint leaves
  2. 1 oz of fresh lime juice
  3. 1 oz of blueberry simple syrup
  4. 2 oz of rum
  5. A splash or two of plain seltzer
  6. Ice
To make the simple syrup
  1. 1. In a medium saucepan over medium heat, combine the sugar, water and blueberries and stir until the sugar is completely dissolved.
  2. 2. Set aside and let cool completely.
  3. 3. Put syrup into the fridge until ready to use.
  4. Note: I like to make this syrup a day before to really let the blueberries flavor the syrup but this is not necessary.
To make the mojitos
  1. 1. In a rocks glass muddle the mint leaves with lime juice and blueberry simple syrup.
  2. 2. Add the rum.
  3. 3. Top with ice and seltzer. Stir well.
