Easy and Delicious Sugar Cookie Recipe

While my New Year usually includes at least 1 resolution that involves healthy eating to detox from all the overindulgence that the holidays bring by week 2  (or let’s be serious…probably earlier ) I also need a little something sweet!  And these cookies are just the thing… super simple, quick and delicious…definitely my favorite no-roll sugar cookie recipe.  
 
These are such versatile and easy cookies…I made these for Lawrence’s Birthday last year to round out his cookie bar and decided to make them last minute this year for Christmas and Christmas Eve to fill out my cookie tray.  On Christmas, I topped the cookies with some red, green and white sprinkles.  But, they would also be perfect for Valentines Day with some little heart sprinkles (or even none at all!).  And for Super Bowl coming up you could top them with your team’s colors.  Yum!
 
sugar cookie cover updatedBelow are the steps I took to decorate the cookies once the batter was all mixed up…
 
First I set out my cookie sheet covered in parchment and a plate of granulated sugar to roll the cookies in.  I also had the jar of sprinkles ready to go!

 I then rolled each cookie in the granulated sugar and placed them on the parchment paper a couple inches apart.

 Next I pressed each cookie down slightly and had my little helper help me decorate the tops with sprinkles.

 Here they are…all ready to go in the oven!

Once out of the oven, I place the entire baking sheet on baking racks to cool for ten minutes or so.  Next, I transfer the cookies to the baking racks to cool by themselves. Then… enjoy!  Not much is better than a nice warm cookie fresh out of the oven:).

Sugar Cookie Recipe

Ingredients
  1. 2 sticks unsalted butter, softened
  2. 1 1/2 cups of granulated sugar (11 1/4 oz)
  3. 1 egg
  4. 2 1/4 cups all - purpose flour ( 11 3/8 oz )
  5. 1/2 tsp baking powder
  6. 1/2 tsp salt
  7. 1 tsp vanilla
  8. granulated sugar for rolling cookies (approximately 1/4 cup)
  9. sprinkles (optional)
Instructions
  1. 1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  2. 2. Cream together the butter and granulated sugar until light and fluffy, approximately 3 minutes.
  3. 3. Add the egg and mix until combined.
  4. 4. Stir in the flour, baking powder, salt and vanilla. Mix until combined.
  5. 5. Set out additional granulated sugar and roll cookie dough balls (approximately 1 to 1 1/4 inches in diameter) in the sugar.
  6. 6.Place on baking sheet and lightly press each cookie down. Top with sprinkles if desired.
  7. 7. Bake for approximately 10 minutes or until lightly browned.
  8. 8. Take out of oven and place on a baking rack to cool. After 10 minutes remove each cookie from the baking sheet to another baking rack to finish cooling (or eat as desired!).
Notes
  1. Makes approximately 24 to 27 cookies.
