BBQ season is upon us and Memorial Day is fast approaching. If you are in need of a great potato salad recipe look no further…

Potato Salad

I made this for one of our BBQ’s recently and it was a huge hit.  The whole grain and Dijon mustard as well as the buttermilk are a nice twist to the potato salad.  And of course, the bacon lover that I am threw in a few pieces of bacon for good measure.

Ingredients
  1. 3 pounds small red potatoes
  2. salt
  3. 1 cup of mayonnaise
  4. 1/4 cup of buttermilk or milk (I used buttermilk)
  5. 2 tablespoons of Dijon mustard
  6. 2 tablespoons of whole-grain mustard
  7. 1/2 cup of chopped fresh dill
  8. fresh ground black pepper
  9. 1/2 cup medium-diced celery
  10. 1/2 cup of small-diced red onion
  11. 4 slices of chopped bacon
Instructions
  1. 1. Place the potatoes and 2 TBS of salt in a large pot of water and bring water to a boil. Then lower the heat and simmer for 10 to 15 minutes, until potatoes are barely tender when pierced with a knife (My red potatoes were on the larger side so I simmered them for 15 minutes).
  2. 2. Drain the potatoes in a colander. Then keeping the potatoes in the colander, place them both in the emptied pot and cover with a clean kitchen towel to allow the potatoes to be steamed for 15 to 20 minutes until tender but firm (I steamed the potatoes for 20 minutes).
  3. 3. While the potatoes are steaming, whisk the mayo, buttermilk, Dijon and whole-grain mustard, dill, 1 tsp of salt and pepper. Set aside.
  4. 4. When the potatoes have cooled enough to handle, cut them into quarters (or eighths depending on the size of your red potato...mine were on the larger size so I cut them into eighths).
  5. 5. Place the cut potatoes in a large bowl and pour enough of the dressing over them to coat the potatoes and toss. You may need to add more of the dressing as the potato salad sits.
  6. 6. Add the bacon, celery and red onions, 2 tsp of salt and 1 tsp of pepper.
  7. 7. Toss altogether and let sit for a few hours for the flavors to marinate. Add more dressing before serving if necessary.

  1. Serves 6 to 8 people.
