Summer Watermelon Drink Series Part II: Sparkling Watermelon LemonadeSpritzer

If you told me two years ago if I would ever need or even want a non-alcoholic beverage for a party or get-together, I probably would have never believed you.  But after 9 months of pregnancy and 10 months with a little baby…I have come to the conclusion that sometimes no booze is best.

This spritzer is great for a get-together as a pitcher can me made in advance so you can relax and enjoy yourself instead of mixing drinks the entire time!  I will definitely be adding this drink to my entertaining repertoire.  I hope you enjoy it as much as I do!

 P.S. I have made this a day in advance and it still tastes good.  However, I recommend just pureeing the watermelon lemonade mixture the day ahead and then adding the ice and club soda right before the event.  Or just make the entire beverage before serving/the day of the event as it is pretty quick and easy to make.
 

Sparkling Watermelon Lemonade Spritzer Recipe

Ingredients:
2 cups of watermelon
2/3 cup of fresh lemon juice from approximately 4 lemons
2/3 cup of granulated sugar
1 liter (4 cups) to 6 cups of club soda or seltzer (depends on how concentrated you prefer your spritzer)

Directions:
1.  Put the watermelon, lemon juice and granulated sugar in a blender and combine until smooth.
2.  Fill a pitcher halfway with ice.
3.  Then pour watermelon mixture and 4 to 6 cups of club soda or seltzer into pitcher.
4.  Serve and enjoy!
